The secret to great scrambled eggs is…

…a chopstick? Strange as it seems, it’s true. Great scrambled egg texture anyway. Instead of using your spatula to mash your eggs about the next time you go for scrambled eggs for breakfast, use a chopstick instead, and use a swirly motion on the eggs as they cook. Makes for a much better texture to the eggs than the typical spatula mash.

    I should have been more long winded when I was writing this. The chopstick is to be used while the eggs are cooking, not to whip them into shape before they go into the pan. The chopstick is meant to replace the spatula. It gives the eggs a much nicer texture, closer to cottage cheese, and it helps blend the cheese into the eggs themselves.
